Add salt pepper,, and turnip also, if-liked. Cook, these slowly for ten minutes - without browning them; Add "r three • v pints -of water- or white stock, , and a large pinch of sugar. The arti-, chokes should be kept under water whilst peeling thom, in order to keep them wpte; slice i them, ; «ind add them 'to the soup./ If artichokes are scarce.: some potatoes may added to take place.' Two or three stalks of'-celery are an improvement. Boil .the soup ; lor about ; an . hour, or until the vegetables-! are" a'pulp.
