RICE WITH TOMATOES (SPANISH).
I'Vy in half-teacup oil (clarified previously by frying a small pieco of broad in. it) one or , two'green peppers whole. Take .them out ;<inclr sltin them. Cut up one or two green poppers,' arid fry-thorn, and a small onion cut up.. When this is tender, not brown, put ■in five or six tomatoes, skinned and broken. Lpt tliem fry until quite pulpy, stirring often.. Throw in a cupful of rice, stir it well iii'.; add plenty hot water ilud salt. Lot it boil gently, tiM tho. rice is done, and water absorbed, stirring frequently to keep from sticking. Servo with the whole green ppppera. for a garnish. Yon can do without the peppers.
