Canterbury -again has been the province to reap, tho harvest of high cheese'prices, for it has 39 private cheese factories,:'and vory little else —only 34 of all other kinds of factories. Compare : this with Taranaki, the hotbed of dairy activity. They have' 247 registered private dairies, all dovoted to butter —and no private cheese factories.'"How'many of these are now being transformed into cheese centres in view of the high-prices ruling? Taranaki the Hub. Taranaki, however, certainly retains its lead as, the centre of the industry so far as numbers can show, for even after deducting its 247 private butter dairies, it remains with 107 factories of other kinds, as against Auckland's 112, (including 39 private butter dairies); and Wellington's 109. Southland and Otago. lead, for cheese factories with 36.
