Pot Luck ?r z • * nt Ji Baker’s Porkpot ' ' Serves 4 600 g shoulder of pork, 1 level tablespoon flour cut into 2.5 cm cubes . 570 ml chicken stock 225 g large pork sausages 1 teaspoon Soy sauce 1 onion, chopped salt and pepper 3 carrots, sliced 500 g potatoes, parboiled and sliced 3 celery sticks, chopped 2 teaspoons French mustard % level teaspoon dried rosemary • Fry pork and sausages gently in their own fat until sausages are lightly browned. • Remove to a deep casserole dish. • Fry onion, carrots and celery for 5 minutes in the pork.fat. • Stir in flour and rosemary and blend in the stock and Soy sauce. Season. Bring to boil, pour over the meat in the casserole. • Cover and cook at 350°F (180°C) for 45 minutes. Remove from oven • Spread potato slices liberally with French mustard and place on the casserole, mustard side uppermost. • Return dish to oven and cook further 45 minutes. • Serve piping hot. Beef and Potato Hot-Pot Serves 5 700 g chuck steak 1 bayleaf 2 onions 1 sprig thyme 1 tablespoon oil 1 sprig oregano 2 cloves garlic 4 potatoes pinch salt salt 2 cups water freshly ground black pepper 1 cup tomato purSe • Trim gristle and fat from steak. Cut meat into cubes. Peel and chop onions. Heat oil in a flameproof casserole. Add onions, cook until soft. • Add meat and cook until brown. • Crush and peel garlic, mash to a paste with the salt. Add to meat with water, tomato purde, bayleaf, thyme and oregano. • Bring to the boil. Cover and simmer gently 1 hour. • Peel potatoes and chop into 2cm cubes. Add to casserole, cover and cook 15 to 20 minutes or until potatoes are tender. • Season with salt and freshly ground black pepper. • Remove bayleaf before serving.
