Hopes for rice flour

NZPA-AP Washington A new, high-protein flour made from rice has been developed that could be important in fighting child malnutrition in poor countries, says the United States Agriculture Department. Linn Hansen, a food chemist in the department’s agricultural research service, said the new flour was made from broken rice kernels that usually cost about half as much as whole rice. Mrs Hansen said the rice flour might help reduce hunger in underdeveloped countries where milk was too expensive or unavailable.
