Tasty lemon jelly

What you need: 2 level tbs gelatine 2 medium lemons ¥4 cup sugar 150 ml cold water 450 ml hot water 4 egg yolks What you do: 1 Soften gelatine in the cold water. 2 Grate rind from lemons. 3 Mix rind, hot water and sugar in. a saucepan, sinimer for five minutes. 4 Stir softened gelatine into mixture in saucepan.

5 Squeeze juice from lemons, beat together with egg yolks in a bowl. 6 Pour some of the hot mixture into this, beat it well, and return it all to the saucepan. 7 Stir constantly over a low heat until mixture thickens slightly. 8 Strain mixture into a serving bowl and leave to cool.
