The conversion to the metric system has caused a variety of misunderstandings and problems — not the least being kitchen confusion over cooking temperatures.

Most oven thermometers are still graded on the Fahrenheit scale and there is no doubt that most housewives also still think by the imperial system. However, there is an increasing number of recipes (particularly of Continental origin) which now give temperatures in Celsius — resulting in some rather unfortunate cooked (or uncooked) products. There are times when

the temperatures indicated seem suspiciously low — then, they are probably given in Celsius. ~ For instance, for the separate stages of cooking a ham, the temperatures may be given as 160 and 200 degrees. This definitely should be read as 160 degrees Celsius (325 degrees Fahrenheit ana 200 degrees C (375 degrees F), respectively. Fortunately, many recipes supply temperatures on both the old Fahrenheit and the Celsius scales; but p is still necessary- to always make sure which svstem is intended — and which kind of thermometer is used in your oven..
