Christmas Shreddo?
Unlike last year, Shreddo should be readily available to- Christchurch plum pudding-makers this Christmas season. “The local market is controlled by the world demand for fats and similar raw materials, ;and because the demand has dropped, the local market should have lots of Shreddo this season,” said Mr Colin Freeman, assistant manager of N. W. Stevens and Company, Ltd, of Auckland, this week. Although there were sometimes problems with getting the product to Christchurch because of freight congestion or strikes, people should .have- 1 no trouble finding Shreddo in shops as the distributors were already carrying a reasonable stock,-he said. Shreddo, which is used i n / ’ traditionally-made Christmas plum puddings, is manufactured from suet. Beef kidney and cawl fat is refined, then shredded and coated in Tice flour to keep the shreds apart. N.-W. Stevens and Company is the sole manufacturer of this "most necessary” ingredient and buys the raw material from only one freezing works which is regarded by the firm to be the only one with the right grade of fat.
Shreddo is traditionally hard to buy in Christchurch and was almost impossible to find last Christmas.
