Illicit eggs
Sir, — 'W. Margaret Dennis (August 14) wrote of “watery whites,” and “frequently full of blood.” I too had her experience and complained. I was invited to inspect the grading of eggs at the Combined Co-oper-ative Distributors, Ltd, plant. I was escorted round the grading machines which helped to ensure a good quality egg for the consumer. A long line of eggs rolled along under the eagle eyes of the staff standing by
to catch the faulty ones. Boxes labelled “cracked” “lumpy”, “undersized,” etc., were in front of each girl, and into these, were deposited the “baddies.” A girl watching ’ for blood.. inside eggs had her Own particular niche -in a darkenedroom with an exceptionally bright light underneath" the tray 'on to which eggs were rolled for her perusaLAny, blood in the eggs was quickly found. I emerged convinced that eggs .in this place could not come undec the heading, “illicit eggs”. Perhaps W.
