Leftovers can be tasty
Leftovers can be made into an appetising second meal with little effort. Here is a recipe that combines leftover vegetables with new ingredients to make a fresh dish. MACARONI LEFTOVERS Any leftover vegetables, potatoes and/or meat 250 g macaroni 1| cup grated cheese One onion Pinch salt, basil and oregano, twist black pepper
Breadcrumbs Method: Slice onions finely, fry, add vegetables except potatoes and meat, heat through, add salt, herbs and twist of black pepper. Cook macaroni’ according to directions on packet, combine with vegetables, add cheese, leaving enough to sprinkle on top, heat until cheese melts.
Tip the lot into an ovenproof dish, spread potato on top, sliced or mashed, sprinkle cheese then breadcrumbs over the top and heat in medium oven 20 minutes or until the top lightly browns. If you have cold boiled eggs, these may be sliced over the potatoes before adding the rest of the cheese and breadcrumbs. Can be served with toast. Serves 4 to 6.
