Make coconut biscuits
Here is an easy recipe for delicious coconut biscuits. You roll the mixture to a thickness of slightly less than half a centimetre, and cut the dough into different shapes with biscuit cutters if you have them... Otherwise use a knife to- cut . dough into oblong shapes about 7cm by 3cm. Or, you’ can try your hand at modelling the dough. If you choose the. creative' way, scoop out a small dessertspoonful of dough and model the shape you want, keeping the dough in one piece. Do not make separate arms, legs and head because the biscuit shape may come apart when it is cooked. You can make animals, birds or flowers, and you will have many other ideas. But remember,, you need .to keep each part reasonably wide. No skinny arms, legs, tails or necks. They cook too quickly.. You will need to use
judgment when you mix the dough. It should be moist, but firm enough to model with your fingers (remember to wash your hands again before you start modelling). You may need to use a little more flour, or a few drops of milk, to get the right con-, sistency. You will need a mixing bowl, a small basin, rolling pin and cutters (optional), a wooden spoon, a - measuring cup, a tablespoon, a fork, a baking tray. Ingredients Plain flour, 1 cup. Baking powder, { teaspoon. Sugar, 2 tablespoonsful. Butter, 2 tablespoonsful. Coconut, 3 tablespoonsful. One small egg. What to do 1. Turn the oven to 350 degrees F. 2. Grease the baking tray with a buttered paper. 3. Put the flour, baking powder and sugar into
the mixing bowl and stir until the dry ingredients are mixed. 4. Warm the butter (do not melt) and rub it into the flour, sugar and baking powder mixture, with , your fingers until it is well mixed. 5. Add the coconut and mix well. 6. Break the egg into the small basin and beat with a fork. 7. Blend the dry ingredients and butter by adding the egg slowly until you have a firm moist dough-like mixture. 8. Roll the dough and cut into shapes, or model into different shapes with floured fingers. Place the biscuits on the cold greased tray. 9. Cook for 15-20 minutes until they are light golden brown. 10. Leave the biscuits on the oven tray to cool.
