Frail loaf
Buttered fruit loaf makes a pleasant change from scones and pikelets for an afternoon or evening snack. This is an easy recipe, and quick to make: Ingredients 250 g mixed dried fruits 1 small cup sugar | teaspoon cinammon | teaspoon mixed spice 1 cup of water 2 tablespoonsful butter cupfuls flour 1 teaspoonful baking powder Pinch of salt Method: 1. Put the mixed fruit, sugar, cinammon, spice, water and butter into an enamel saucepan or bowl. Place on the stove and bring to the
boil. Simmer over a low heat for about five minutes. 2. Remove from the stove and leave the mixture to cool. 3. While the mixture is cooling, sieve the flour, baking powder and pinch of salt into a basin.. 4. Grease a loaf tin thoroughly with a buttered paper. 5. Heat tlie oven to 325 degrees F. 6. When the mixture is cool, add the sieved dry ingredients and mix well. 7. Spoon the mixture into the loaf'tin, and cook for one hour. 8. When cooked, turn the loaf out on to a cake rack and leave to cool.
