This eye-catching sculpture which includes a pig’s head, was created by Mr Trevor Childs, a master butcher at the Newmarket Butchery in Colombo Street. It is trimmed with angelica, lard, parsley, slices of orange and various cuts of meat, and is on display as part of Pork Promotion Week. Mr Childs has created a number of meat sculptures over the years, ranging from a trio of springboks as a backdrop to a rugby game—to mark the 1965 tour of the South African rugby team—to farmyard displays.
