Tasty meal
What would we do without the homely nourishing egg? Here is a recipe for making an egg into a tasty satisfying light meal? — BAKED EGG POTATO For this you need mashed potato, and you can use up any left overs in the fridge. Or, cook some more. It doesn’t take long to boil two potatoes, mash and season them, with salt and pepper. What to do:— Put the mashed potato into a saucer, filling it nearly to the rim. Make a hollow in the middle, and place in a moderate oven (about 350 deg) to heat for about five minutes (less if the potato has just been cooked). Remove from the oven.
Break an egg into the hollow in the potato. Sprinkle with grated cheese, and return it to the oven to bake until the white is quite firm. Garnish with parsley and small pieces of tomato (if you have some), and your baked egg potato is ready to eat.
