Fishing now major interest
I Twenty-two fishing ' boats use the anchorage at j the north and south wharves in Kaikoura and ' as many small dinghy-type ' outboard-propelled craft operate from slipways and ramps along the coast. With this increase in the number of boats, three fish processing factories now operate in Kaikoura
and two others have applied for moorings and factory sites. A large amount of wet fish is processed for both local and Australian markets and all the factories process crayfish for overseas markets. One factory freezes whole crayfish and exports them that way to Japan.
