Quick meals for long week-end

A few quick and easy suggestions for Labour Weekend will not go amiss in any household where the family is likely to bring in friends unexpectedly for a meal. Quantities in all the recipes will need to be calculated according to numbers to be served. FISH PIE Flake a can of tuna, salmon or other fish and arrange alternate layers in an ovenproof dish with sliced cooked potatoes, a little grated onion, salt and pepper. Pour over a can of celery soup. Cover dish and bake at 350 until bubbly. Remove lid to brown. MACARONI CHEESE Combine 1 tin of celery soup with J cup unsweetened milk and 2 cups grated tasty cheddar cheese. Heat until cheese melts then stir in 4 cups of cooked, welldrained macaroni and (optionally) | cup of sliced olives. Serve very hot. TART FILLING Mix 1 tablespoon each of butter, sugar, chopped raisins, chopped dates, chopped lemon peel and currants. Heat all together, stirring until butter melts. Add a little spice to taste. Fill into cooked pastry shell or individual shells and ice with lemon and water icing when cold. ORANGE DESSERT Boil together for one minute a cup of shredded orange marmalade, 1 cup water, 1 tablespoon redcurrent jelly and pour over drained tinned mandarin sections. Chill and serve with whipped cream.
TOMATO AND CORN SOLP Mix a can of tomato soup with a small can of creamstyle sweet corn and thin with unsweetened tinned milk (do not allow to boil after adding milk). A little curry powder can be added if liked. Sprinkle with chopped parsley before serving.
