When fishermen catch a -kahawai they usually leave it on the sand to rot or throw it back into the sea, believing it is no good for eating. But it can be made into tasty meals. The fish must, however, be bled as soon as it is caught. So next time you | land a kahawai, take it home 'and try either of these recipes. I can recommend both methods. 1 have not given exact quantities as they will depend on the size of your fish and your Own judgment as to how many servings it will yield. CASSEROLED WITH CURRY Prepare and fillet the fish. Cover the base of an ovenproof casserole dish with melted butter. Place a layer of thickly sliced onions ini

the butter, then a layer of | the fish. Sprinkle fish with . salt, pepper and curry powder to taste, and a little lemon juice. Add enough i water to just cover the onion. ■Put a lid on the dish and ; place in the oven at 350 degrees. Cook for 30 to 40: minutes. Curried kahawai should be served with freshly boiled: rice. GRILLED CUTLETS Cut the fish into lsin cutlets. Spread each cutlet with softened butter mixed with a generous quantity of lemon juice. Sprinkle with pepper and salt and grill six inches below the heat. Turn and grill on the under side for a short time. Serve sprinkled with chopped parsley and lemon slices.
