This is an original Latvian' recipe for bacon rolls — an ! excellent substitute fori scones. You will need:— 11b and 2oz of plain flour J pint milk j teaspoon salt 4oz mashed boiled potatoes 3joz butter 1 cake compressed yeast Boz bacon, diced 1 small onion Pepper Method: Melt butter, warm milk and mix with the yeast, a teaspoon of sugar and a pinch of flour. Add the sieved potato and the balance of the flour; knead until it drops easily off the hands. Put aside in warm place until it has doubled in bulk — about half an hour. Turn out on floured board and roll out a little less than half an inch thick. Cut into 3 inch rounds. Mix bacon, grated onion and a little pepper together and place a spoonful of tjhis on each round of dough: double over. Put aside to rise and when light and fluffy (about 120 minutes) bake at 400 until golden brown (about 15 ■ minutes).
