Sweet-sour beef

Left-over roast beef may be made into a sweet-sour dish with pineapple and soy sauce. This recipe, quick and easy to prepare, makes enough for four servings, and should be served with freshly boiled noodles or rice. Mutton may be used instead of beef.

You will need:— 11b left-over beef or mutton cut into dices 1 large onion i cup brown sugar I cup soya sauce Boz can pineapple pieces IJoz butter Method: Fry the finely sliced onion in the butter, and lightly brown the meat in this also. Add brown sugar and sauce, and stir well for two or three minutes. Mix in the pineapple and juice, and boil rapidly without a lid for a few minutes until the liquid has reduced and thickened slightly. Added thickening can be mixed in now in the form of cornflour mixed with a little cold water. Test for seasoning, and serve at once.
