Apricot stuffing

Try this apricot stuffing next time you roast a chicken. You will need:— 4 ripe apricots 2oz fresh breadcrumbs 3 small sticks celery 1 green pepper 1 small apple 1 egg Butter Salt and pepper

Method: Halve apricots and remove stone, then chop them small and combine with the grated i celery, chopped pepper and chopped peeled apple. Add breadcrumbs, beaten egg and about 2 table- i spoons melted butter , seasoned with salt and pepper.

Halved apricots added to the baking dish after a chicken has been cooked or pork chops have been fried, heated through until softened and served as a garnish to either, are well worth trying.
