Apricot preserve

For something very special in the way of preserves try this apricot preserve. You will need:— 31b apricots 2} cups water

3|lb sugar. Method: Choose apricots that are not over-ripe and prick with a toothpick, then place in bowl and pour over boiling water. Cover and leave to stand until skins are loosened, then plunge into cold water. Drain and cut in halves removing skins and stones. Boil the sugar with 2| cups of water for 5 minutes and pour this syrup over the prepared apricots; leave overnight. Repeat the process next day. On the third day drain off syrup and boil, then add the fruit and simmer it until it is transparent; cool. Drain and pack into jars. Boil syrup again and pour over the fruit in jar. Cool and seal.
