Beef is more nourishing and appetising than either pork, lamb or chicken, according to a survey of housewives’ attitudes made by the University of Newcastle - upon ■ Tyne in England. Moreover, it is the least wasteful and has least fat and, although not the tenderest of meat, is easy to cane and is very digestible. But the survey — carried out in four towns in the north east of England — showed that beef was considered to be the most expensive of the meats and not very thrifty. thought of as a cold meat. However, it was not regarded as particularly versatile and inclined to be expensive. The housewives voted chicken as being the tenderest, leanest and cheapest of the four meats. It also had the advantage of having an appetising smell when being cooked or eaten and could easily be used up in a second meal. However, chicken was regarded as being the least nourishing and to have the least taste. Although lamb was regarded as the least appetising of the four meats, it was believed to be, next to beef, the most nourishing. The, housewives said lamb was a comparatively thrifty meat with the best connotations of tenderness and digestibility, making it the; kind of meat that children and invalids could eat and digest easily.
