Swedish spice cookies are dark brown and flavoured with cinnamon, cloves and ginger and are usually cut into fancy shapes and decorated after baking. To make about 8 dozen you would need:5 cups plain flour 1 teaspoon bi-carbonate of soda 3 teaspoons cinnamon 3 teaspoons ground ginger J teaspoon ground cloves 1 cup butter i cup cream 1 cup brown sugar (packed) 1 cup treacle 1 egg METHOD: Mix flour with soda and spices and sieve into basin. Work in butter with finger tips. Beat cream until stiff and blend in the beaten egg, the sugar and treacle then blend the two mixtures well. Chill thoroughly before kneading on a floured board. Roll a small amount at a time until very thin. Cut into heart shape and cook on a greased tray at 375 for 8 - 10 minutes.
