Continental corn casserole needs garlic sausage and bacon as additives. It makes a substantial dish. To serve 4 you will need: 1 16oz tin whole kernel corn or equal quantity of cooked fresh corn 4 ozs garlic sausage 1 egg 1 cup mashed potato J cup cooked green peas i cup tomato puree 1 dessertspoon vinegar Buttered crumbs Salt and pepper 2 rashers bacon.

Method: Remove skin from garlic sausage and chop finely then mix with the mashed potato and add salt, pepper and vinegar. Add tomato puree, beaten egg, corn and peas and after blending well pour into a greased ovenproof dish or individual ramekins. Sprinkle top with buttered crumbs and the bacon chopped and bake at 350 for 20 minutes until bacon and crumbs are crisp and dish is thoroughly heated.
