Suggestions for breakfast dishes usually come in handy—imagination is at a low level in most households in the early morning and regrettably too few of us make our preparations the night before. This, incidentally, is an excellent idea and often food can be prepared in excess for the evening meal and used for breakfast; such as extra potatoes for rissoles or fish cakes; extra boiled rice is also useful for this type of food. Extra fish can also be cooked during the preparation of dinner which can l>e served flaked in a rich sauce or combined with mashed potatoes or rice lor fish cakes—flavoured with a little curry powder and a spoonful of grated onion. Cooked chicken or other meats can also be chopped or minced and used on toast or as a filling for hot scones which are excellent and quick to serve for breakfast.
