Noodles with walnuts

For those who really enjoy this type of food the following noodles with walnuts is strongly recommended. In Italy this is called gnocchi alia granerese. To serve six you need:—

11b cottage cheese 1 cup grated cheese (preferably Parmesan)

1 cup finely ground walnuts 1 clove garlic 2 teaspoons salt | teaspoon pepper Chopped parsley 11b broad noodles Method: Crush the garlic and mince or grind walnuts as finely as possible and blend the two together in a mortar preferably or on a board until a paste is formed. Combine this with the two cheeses, the salt and pepper and blend thoroughly. Cook noodles in boiling salted water until just soft and drain well. Add to the cheese and walnut mixture tossing lightly with two forks until the noodles are thoroughly coated. Place on a heated platter and serve lightly sprinkled with finely chopped parsley.
