Dried apricot pulp

Experiments to' convert over-ripe apricots into strips of dried pulp have been conducted at the D.S.LR. research orchard at Eamscleugh, Central Otago, Future tests may include peaches. The stones are removed from the fruit which is fed into a mincer. Potassium metabi-sulphate is added to stop fermentation. The pulp is dried in the sun for one day and then left in the shade. Mr J. E. Hawkins, manager of the orchard, who experimented with 5001 b of the fruit, says the pulp compares with imported apricots for colour and taste. It might be a marketable proi duct.
