Snow Cake

It might seem as if strawberries are figuring rather prominently in this series of recipes but they are plentiful at this season, they are also a suitable party fruit and their flavour blends admirably with most sweet backgrounds. This recipe for Snow Cake is another of those party sweets that are easy td prepare (in advance) and yet can be a most effective focal point on a buffet. Basically, if is a marshmallow ring filled with fresh strawberries. You need:— 3 egg whites, Pinch of salt 4ozs sugar 1 rounded tablespoon gelatine 1 teaspoon vanilla essence Fresh strawberries Whipped cream. Method: Place egg whites, salt and sugar in bowl. Place gelatine in measuring cup and fill the cup to half full with boiling water; stirr until gelatine is completely dissolved. Fill the cup with cold water and pour the contents into bowl with egg whites, etc. Beat all together until thick and foamy; add vanilla and continue beating until beginning to set. Pour into a ring mould lined with wet greaseproof paper. When set, turn out on serving platter, fill centre with strawberries previously sprinkled with castor sugar and chilled. Decorate with whipped cream and fruit.
