EASY RIDERS
Angels-on-Horseback are oysters sprinkled with lemon juice and enclosed in a piece of bacon rasher (about 4in in length) and grilled until bacon is crisp. Do not overcook as the oyster will become tough.
Devils-on-Horseback are prunes from which the stones have been removed, wrapped in bacon and similarly cooked. Serve both on picks, hot.
