GRILLED HAM SLICES, CAFE MARTIN

This is an unusual combination of ham and anchovy sauce or paste. It will serve six people. You will need: 6 slices cooked ham about Jin thick 3 tablespoons melted butter 3 tablespoons butter i teaspoon anchovy sauce or paste H cups fresh breadcrumbs Plum sauce or other spicy fruit sauce Method: Brush ham slices with the melted butter and arrange on a baking sheet. Place them about 6 inches from the grill and cook for 4-5 minutes until brown on one side. Melt the. other butter and stir in the anchovy paste or sauce. When well mixed add the breadcrumbs and blend well. Turn ham slices over and cover the unbrowned side with the breadcrumbs mixture. Return to oven and if possible reduce the heat of the grill or place oven tray lower and cook until the breadcrumb mixture is lightly browned. Serve at once with fruit sauce and French - fried potatoes. z
