CHEESE AND BREAD PUDDING

For four you will need: i inch slices white bread Butter 1 cup grated cheese 2 eggs 1 cup milk 1 teaspoon salt i teaspoon paprika 1 teaspoon dry mustard 2 rashers bacon i teaspoon curry powder Chopper parsley Method: Remove the crusts from half-inch slices of bread and lightly butter each slice. If individual ramekin dishes are being used, cut two slices into triangular eighths (giving you 16 small triangles of buttered bread). Cut remaining bread, sufficient to make about 4 cups, into dices. Place layers of diced buttered bread into well buttered dishes and sprinkle each layer with cheese. Beat the eggs well and combine with milk, salt, paprika, curry powder, mustard and the bacon chopped and previously fried until crisp. Pour these ingredients over the bread and cheese. Arrange triangles standing upright around the edge. Bake at 350 for 20 minutes. Serve at once sprinkled with chopped parsley and dusted with paprika. •
