Curried Bananas
Bananas may also make an unusual curry dish. This recipe, for four, should be served hot with freshly boiled rice. You will need: 6 slightly unripe bananas j cup dessicated coconut 1 cup milk 1 egg 2 tablespoons curry powder 1 tablespoon sweet chutney 1 teaspoon sugar Cayenne pepper Salt
Method: Put coconut in a saucepan, pour over the milk and bring to the boil.! Remove from heat andi allow to stand for one hour. Press with back of wooden spoon through a strainer and pour the extracted liquid into a pan with chut-1 ney, curry powder, sugar,: salt and a very little j cayenne pepper. Peel andi slice bananas and add toi sauce and simmer for 15 i minutes. Just before serv-1 ing stir in well-beaten egg. i Serve with hot, freshly: boiled rice. ’ i
Lemons and Oranges.—lf I lemons have become dried J place them in a hot ovenj for a few minutes and they will plump up again. When preparing oranges for a fruit salad, leave them inj hot water for a few minutes | before peeling. This makes! the skin much easier to remove.
