Lamb Cutlets May Feature In Milan

April 18 New Zealand lamb may become a permanent feature on the menu of Milan's most exclusive restaurant—the 102-year-old Savinl’s in the Galleria Vittoria Emanuele. A New Zealand Meat Board promotion has been responsible for introducing frozen food to the historic establishment's kitcben. The restaurant's owner, Mr Angelo Pozzi, Is now considering featuring frozen New Zealand lamb on the regular menu. Last week's production of lamb was for a special luncheon for 20 of Italy's top food and cookery writers. Mr Pozzi said that his chef had demonstrated superbly just what could be done with New Zealand lamb. "I would be prepared now to serve it—leg of lamb and lamb cutlets—to my customers." he said. “It's possible that we might describe the dish as 'Savinl’s New Zealand lamb speciality'." Savinl’s have resisted frozen food because many

Italians distrust anything which they consider is “not fresh.” Mr Pozzi said that many other Milan restaurants seried frozen food, which gave customers “bad impressions” of them.

New Zealand lamb was a very good product—provided it was thawed properly, said Mr Pozzi. “The lesson all Italian people will have to learn with all frozen food is how to thaw it,” he said.
