A very useful preserve, which can be used like Lemon Butter as a filling for tarts and cakes can be made from apples. This is Apple Cheese. To make it you will need:— 11b apples 3oz butter 1 large lemon 2oz sugar 2 tablespoons fine, stale cake crumbs 1 egg.

Method: Peel, core and cut apples into small pieces and cook together with the butter and the juice and grated rind of the lemon until you

have a soft mixture which can be stirred with a spoon. Add the sugar and the cake crumbs and finally the beaten egg. Stir over a very low heat, being careful that the egg does not curdle, until thickened.
