Cooking For 1967 Whitebait Baskets

(By CELIA TIMMS) Cook some of your whitebait this year in the following way. I call it Whitebait Baskets. For six servings you will need:— 6 medium potatoes 1 cup whitebait I cup white sauce 1 teaspoon chopped parsley Lemon slices Lemon juice Nutmeg Cooking oil.

Method: Peel potatoes and hollow each one into a basket shap with a sharp, pointed knife. Dry them thoroughly. Fry them in deep oil or fat until a skewer goes through them-easily. Remove from the, oil and drain on absorbent paper. Keep hot Heat the white sauce, add a squeeze of lemon juice and taste for seasoning. Add parsley, then the whitebait and a pinch of grated nutmeg. Simmer 8-10 minutes then put in the prepared potato baskets and serve with lemon wedges.
