Recipe For 1966 QUICK PICKLE

With cold meals becoming more frequent on our menus, a variety of pickles to serve with them is usually sought. Here is a pickle recipe which does not require any cooking, merely setting aside for a couple of hours. It is quickly and easily made. You will need: i cup chopped sweet gherkins 1 cup chopped onion 1 cup chopped green pepper 2 tomatoes i cup strained lemon juice 1 level teaspoon sugar

Method: Melt the sugar in the lemon juice, then, in a jar or bowl combine all the chopped vegetables. Add the sweetened juice and allow to stand covered at room temperature. Stir the mixture frequently for about an hour. Put lid on jar and chill the pickle for at least two hours. This mixture will keep well in the refrigerator for a day or so—but no longer. Other additions can be made according to your taste.
