Bottling Peppers
Modern recipes for the sophisticated housewife call increasingly for such garnishings as green peppers to give piquancy, as well as glamour, to dinners and supper dishes.
Green peppers are particularly useful in giving zest to spaghetti sauce and stews. Cut into rings, they are invaluable as a decoration with other dishes. But green peppers are not always readily available at the greengrocer’s shop. The way to ensure a permanent supply is to homebottle them now, while they are plentiful- They are particularly suited to preserving in small containers such as honey and coffee jars, for which the new “G” seals are now available. Method: Wash the peppers, remove the seeds and pre-cook them for three minutes. Pack into hot jars and cover with the liquid in which they were
pre-cooked, or boiling water. Seal the jars, and process them for 120 minutes in a boiling water bath, or for 35 minutes in a pressure-cooker at 101 b pressure.
