Marmalade Cheese Tart is a sweet which is both nourishing and tasty, and will prove a favourite with children, for whom variety is the spice of life, as far as puddings are concerned. It does not actually have any cheese in the ingredients, being similar to Lemon Cheese. It’s all in the name.

You Will Need: 1 tablespoon butter 1 tablespoon sugar 2 tablespoons of marmalade 1 yolk egg 1 whole egg 1 egg white

2 tablespoons sugar 4-6 oz sweet pastry.

Method: Take an Sin flan tin, cover with the sweet pastry, and carefully bake in an oven 350 degrees until lightly brown. You will find the fluted type of flan tins hold the pastry to the sides much easier. While the pastry is cooking prepare the filling. In a saucepan melt the butter and the tablespoon of sugar and the marmalade. Beat the yolk and the whole egg together and add to the saucepan. Gently cook this until it thickens slightly. When the pastry is nearly cooked pour in the marmalade mixture spreading it evenly. Whip the white of one egg to a peak, add the two tablespoons of sugar and whip again until stiff. Cover the tart with it, return to the oven at 300 degrees and bake until meringue is cooked.
