Bunnies Wait At Breakfast

The majority of hotels in New Zealand could not be expected to complete on an international basis because 90 per cent of the hotels in this country had fewer than 30 beds, the manager of Warners Hotel (Mr A. Tremain) said westerday. He was speaking at a breakfast for 60 guests at the airport restaurant yesterday morning. The purpose of the breakfast was to discuss meatportion control and pre-cut and pre-wrapped meats, said Mr Tremain.

In the last few years, he said, the catering industry in New Zealand had enjoyed a great surge forward. It had become extremely competitive in terms of variety, quality and price. New Zealand’s farm products, by virtue of climate and husbandry, said Mr Tremain, were without equal. In many cases, the talent for presenting these to the public lacked nothing in culinary skill and artistry.

Mr Tremain said that culinary skill in all its forms must be ranged alongside technology and education to increase efficiency and combat heavy overheads. The host company for the

breakfast, Meat Packers (N.Z.) Ltd., he said, was now bringing out meat wrapped and cut to a specific weight and price. "This is one thing that is going to help the catering
