QUALITY IN MEAT

Research On Molecules (N.Z. Press Association) HAMILTON, April 7. A rotor which spins at 60,000 revs a minute producing a centrifugal force equal to a quarter of a million times the force of gravity is helping scientists at the Meat Industry Research Institute in Hamilton in their search for better meat quality. The rotor is the vital component of a £lO,OOO two-ton analytical ultra - centrifuge machine, built in California and just installed in the laboratories of the institute. The machine is used to study the composition and properties of large molecules. Scientists at the institute are using it to study protein molecules which make up the structure of meat and muscle.
