Alternatively, make a Rhubarb and Ginger Meringue by beatmg an egg yolk, a little choE preserved ginger and a squeeze of lemon juice through well-sweetened rhubarb puree. When boiling hot top it with a meringue made with the egg white and two tablespoons of sugar. They are both delicious ways of making a friend out of a rather prosaic winter companion.
