"MY FAVOURITE RECIPE"
Honolulu Cream “My Favourite Recipe” comes this week from Mrs Warren, wife of the Bishop of Christchurch (the Rt Rev. A. K. Warren) and Dominion president of the Mothers’ Union in New Zealand. Mrs Warren brought her recipe for Honolulu Cream back home with her to try out on her family when she returned from her recent visit to Britain and Europe Here it is:—• 6 egg yolks 2 cups of milk T cup of thin cream Brown sugar. Have ready a shallow fireproof dish. Scald milk. Beat eggyolks well and pour into a double saucepan. Add milk and cream gradually, stir with a wooden spoon, until it thickens. Be careful not to let the mixture boil or it will be spoiled. Cool and put into the refrigerator.
When set and cold, sprinkle deeply with brown sugar, leaving some in lumps. Have the grill hot and put dish under for a few minutes. Cool and serve with fruit.
The top should be like brittle toffee. This recipe is sufficient for six people.
