SHORT COURSES FOR BAKERS

Short baking courses of a wiek’F duration will in future be held by thfe Wheat Research Institute in Christchurch for senior bakers who cannot be spared from their employment for as long as a month. Reporting to the Wheat Research Committee yesterday the director of the institute (Mr E. W. Hullett) said that in past years one or two courses i had been given each year for senior bakers, but it appeared that many foremen and others would like to attend but could not be spared for as I long as a month. It was accordingly proposed to shorten these courses to a week. It was intended that all the experimental loaves would be made beforehand and stored *n a deep freezer. As each topic was r eing discussed the appropriate loaves would be brought in for examination. This would mean that almost as much work would be covered by the short courses as by the longer courses, at which bread was made from day to day
