Sir, —It is interesting to read Mr F. H. Hawker’s statement that 20,000 to 30,000 tons of desiccated potatoes can be used for bread making, thus relieving the call on wheat. Potatoes could also replace to a considerable extent the use of both bread and butter, now so much our staple diet at two, if not three, meals a day. There must be thousands of acres in small areas suitable for a crop of potatoes, which would not be an economic proposition for wheat, and a greater emphasis on the increased production side of the saving campaign seems much overdue. —Yours, etc., SPUD.
