BUTTER
Sir,— Following the remarks of your correspondent “Real Butter.’ I must say that I have already complained to two of the biggest storekeepers in the city about the quality of the gutter they sell. The answer was that they had to take the butter from the factories as they got it and that they could do nothing at rll about the matter. Surely the Health Department ■inspectors should be'on the job to see that the butter produced is up to quality'and that it does, not contain any chemical matter injurious to health—Yours, -etc.. [An official of the Health Department said yesterday that if “Nurse” referred specific complaints to,' the district health inspector .they would be mvestigated. It was the regular practice of the Health. Department' to take butter samples from shops. The samples were referred to the Government Analyst for analysis, and if they were below standard action was taken.]
