Hungarian Kisses—soz butter, 1 egg, dates and walnuts, 3oz sugar, 1 teaspoon baking powder, 7-Boz flour, loz cocoa.: Cream butter and sugar, add egg, then dry ingredients, and mix to a soft dough. Then stone a date, put a walnut inside, wrap dough round and make into a small ball. Bake in a moderate oven; then cool, ice with chocolate Icing and place piece of walnut on top. Apple Rice —Cook 2oz rice in i pint milk till soft; flavour, with essence of lemon and add one tablespoon sugar and yolk of egg. Put in buttered dish and cover with stewed and sweetened apples with yolk of an egg added. Put in oven for 20min to set; then put on top meringue of 2 egg whites and sugar, and brown, in oven. Serve either hot or cold. Apple and Raisin Tart—Wake an open tart as follows: 4oz • flour, 4oz cornflour, 3oz butter, 2 eggs, 1 tablespoon sugar, 1 teaspoon baking powder. Rub butter into dry ingredients, mix in beaten yolks, and roll out. Line a tart dish and fill with the following mixture:—To 2 cupfuls qf stewed apples add a h'andful of raisins and a i teaspoon cinnamon. Mix well and spread on tart. Beat whites of the two, eggs until stiff; add tablespoonjff sugar. Pile this roughly on the apple mixture and bake until lightly browned.
