WHEAT AND FLOUR

•SO TUB ..BDITOB OS THB PBBS3. Sir,— Regarding the wheat and flour question, as a practical fiourmiller of 50 years' experience in New Zealand, I would like to ask the Minister for Industries and Commerce how he proposes. to make .a ton of flour from 47 bushels of dirty wheat. Under the present cohdir tion of harvesting, heading or threshing of wheat, two-thirds of the 1937 crops were put in the mill or store very much out of condition. When the wheat is dried out this means a loss of two to three pounds a bushel. We have to redress all the wheat from the header or thresher, as everything that grows in the field seems to go into the bag and is sold as good milling wheat. Therefore, v/hen the wheat is dressed fit for grinding, there is another loss to the miller of not less than 31b a bushel. So as a miller I should like to know how to make one ton of flour, from 47 bushels of wheat.—Yours, etc.. A MILLER. April 30, 1937. '
