I Sir. —A cable has recently appeared i in the daily Press mentioning that the | "Shipping Committee" seriously criticises methods of handling food in London and refers to tho case of frozen ' meat being left exposed on the quay. I. would like to inform you that at the Uoyal Albert Dock ships come alongside and discharge cargoes of frozen meat by endless belts iroiri' deck of steamer to the cold sorting floors where the temperature is the same as in the cold store. Ihere the meat is sorted according to marks and grades and dclivereu under cover to insulated railway trucks for the provinces. If required for storage the meat, is taken by mechanical conveyors to the adjacent cold store, and all London agents should use this store. The Dominions Boyal Commission a year or two "ago after giving 'a thorough investigation ot the facilities by all ports in the United Kingdom, ended their report as follows: —

"The largest proportion of produce from the Dominions, and especially that from Australia and New Zealand, comes through the Port of London, which is the best market in the world and. further, a market where not only are high price* obtained, but where it is always possible to find a buyer and also advantages in regard to finance and insurances not obtainable at other ports. "We think the Dominions are entitled to ask frfr all possible facilities in regard to the handling and disposal of their produce and the action of the Authority has been energetic and it appears to have taken a fairly wide view of the improvements immediately needed."
