Strawberry Conserve. —No preserve occupies quite such a place in public favour as does strawberry conserve; and, indeed, if well made, it is a feastfor the eye as well as the palate. A preserve of better colour is produced if it is made in small quantities. The following is the only recipe which will giye conserve of a rich cerise colour with the fruit entirely whole: A saiucepan—aluminium for preference be used, of a size sufficient to allow the jam to boil up very quickly without boiling over. In it olace hot water to cover the bottom to a denth of iin, or a little more, place on the stove, weigh 31b sugar, and when the water boils add' half the sugar; when reduced to syrup add the balance of sugar, boil up well for about five minutes (taking care the 6Ugar does not brown at all —if it does, add a little more boiling water). Then add Sib washed, hulled and dried strawberries. Keep the jam boiling as fast as possible for 20 to 30 minutes, making sure from time to time with a spoon that it is not sticking to the bottom of the pan, but do not stir.
