BUTTER AND CHEESE

Since the Easter holidays the demand for New Zealand and Australian butter has slowly but steadily grown in strength, and closes at a shilling higher on the week for both "choicest" and secondary qualities. Messrs Weddel and Co. mention that the floors of agents aro virtually clear, and prospects for a brisk market next week appear certain to be realised. The short arrivals for the past three weeks are making themselves feit. The British markets

for foreign butter are firm at last week's prices, owing to tho continued shortage of Continental kinds. The boycott in Germany against the high prices prevailing there, viz., about is Cd per lb, for ordinary butter, may cause a decrease in the imports ito that cruntry and divert it to the United Kingdom. "Choicest" New Zealand butter is to-day quoted at 120s to l2_s. and finest at 118«. "'Choicest" Austra- i lian ranges from USs to 120s. New season's Siberian is realising exactly the same prices as New Zealand, while choicest French butter is quoted at 130s to 134s against Dutch 127s to 1295.

The cheese market continues firm at sixpence advance on the week, Messrs Weddel quoting New Zealand choicest at 61s to 625, and finest ot 59s to 60s; the respective quotations for Canadian cheese are 63s to 65s and 61s to 625.

Tho New Zealand Loan and Mercautile Agency Co. say that a good demand has been experienced for calted butter at romewhat lower prices, choicest unsalted, which is in small Eupplv being firmly held. There are, however ample supplies of secondary unsalted' which are acting es a drag on the market, and to clear these substantial reductions in prices have bad to be acat 11& to 122s per cut. For cheese, the market remains firm, though trade is on the slow side, and buyers resist strongly attempts to raise values. There has been a considerable increase m the arrivals of New Zealand mutton during the past week, the Matotna b-ving- brought 9427 carcases. LAMB VALUES STEADY. Arrivals of frozen lamb chow a considerable increase over last week Thevconsist of 170,931 carcases from New Zealand, G8,102 carcases from Australia I and 7188 from South America. The I C.C. and IX Company report values as remaini'!-. steady, at about last week's rates; stocks are not in excess of requirements. Hindquarters of New Zealand beef are quoted at 4|d per Lb to 4.d, and ' forequartcr. ,3-Jd. Australian beef is about id per U» lower than New Zealand. The arrivals for tbe week, as given by the C.C. and D. Company consist of 5997 quarters from New " Zealand, 1081 from Australia, and 41,80-1 quarters from South America.
